Homemade bread



Ingredients:
  • 1kg flour
  • 15g fresh baker's yeast
  • 20g salt
  • 600ml cold water from the fridge

Directions:
  1. In a bowl mix the flour, the salt and the water.
  2. When it is mixed, pour on the desk, and mix well all the ingredients.
  3. Cover with the previous bowl and let rest 10 minutes.
  4. Knead (working- bending  and twisting) for few minutes, cover again and let rest another 10 minutes.
  5. Add the yeast with a bit of water, mix well (bending and twisting), cover and let rest another 10 minutes.
  6. Back to knead a few minutes, cover with wet cotton cloth and let rest 1 hour.
  7. Cut into wedges or give the desired shape.
  8. Roll each portion to grab surface tension.
  9. And cover with the previous wet cloth , and let rest between 3-5hours in a place without temperature changes.
 

     10. Preheat the oven to 230ºC and bake 40-50 minutes.
     11. Let cold for 45 minutes on a oven rack.

Baked hake with red shrimps



Ingredientes:
  • Hake
  • 2 Red shrimp
  • 1/2 red bell pepper
  • 1/2 green pepper
  • 1 onion
  • 1 tomato
  • 2 clove garlic
  • 200 ml white wine
  • Olive oil
  • Salt
  • Black pepper


Preparación:

  1. Preheat the oven to 180ºC.
  2. Slide the onion and the peppers into thin strips.
  3. Chop the galic and cut the tomato in half.
  4. Place the onion on an oiled baking sheet and then sit the hake with the skin down.
  5. Cover it with the peppers and the tomato.
  6. Sprinkle with the garlic.
  7. Season with salt and pepper and drizzle with oil.
  8. Bake it for 20-30 minutes.
  9. Pour the white wine on the fish, then return to the oven for 10 minutes more.
  10. Meanwhile, heat oil in a large pan over medium heat.
  11. Add the red shrimps and cook them until they are pink and opaque. Stirring frequently.
  12. And serve.

Baked apples


Ingredients:


  • 6 reinette apples
  • 100g sugar
  • 150g raisins
  • 100g of butter
  • 125ml water




Directions:

  1. Preheat oven to 180 ° C.
  2. Wash the apples and scoop out their cores from top of the apples.
  3. Give a horizontal cut in the center and around the apple with a sharp knife, without elaborating, only the skin. This is necessary before grilling to prevent bursting and spoil the presentation.
  4. Mix raisins with sugar.
  5. Grease a baking dish with a little butter and place the apples.
  6. Fill in the gaps of hearts with the mixture of raisins to overflowing.
  7. Add in 125ml water in a bowl on the baking dish.
  8. Sprinkle apples with the remaining butter in small portions.
  9. Introduce them in the oven for 40-55 minutes, depending on the size of apples.
  10. Serve hot or slightly warm.

Roasted pumpkin seeds


Ingredients:
  • Pumpkin seeds
  • Salt
  • Sugar


Directions:
  1. First, remove the pumpkin seeds and you drain the rinsed seeds. 
  2. Then, pour them onto a large, dry cookie sheet and let them sit for 24 hours or so to dry out.
  3. Make sure that there are mounted on each other and add enough salt with double purpose season them and it removes the excess moisture.
  4. Preheat oven to 150º.
  5. Bake them for about 45 minutes or until golden brown. Stir them occasionally.
  6. They are ready, when the shell is very cripsy.
  7. Remove them from oven.
  8. Sprinkled a little bit of sugar on while they were hot...makes a great taste.

Ham with pineapple


Ingredients:

  • 1,5kg of ham
  • 175g brown sugar
  • 1kg pineapple
  • 100ml. pineapple juice
  • 60ml jerez
  • Cloves spice


Directions:

  1. Score the rind of the ham with a diamond pattern.
  2. Place it in a roasting pan and cover with the sugar.
  3. Coat it with the pineapple juice.
  4. Pre-heat oven to 180ºC.
  5. Slide the pineapple. 
  6. Grill it 30min, bathing with jerez and arrange pineapple slices with cloves over the outside of the ham.
  7. Slide the ham and serve ham slice with pineapple ring. 
  8. You can add cheese, if you want.

Buttered biscuits




Ingredients:


  • 500g flour
  • 200g caster sugar
  • 250g butter
  • 6 egg yolks
  • 1 beaten egg
  • Vanilla
  • Salt


Directions:

  1. Raising the flour and add the sugar, soft butter, vanilla and salt.
  2. Mix well that mixture while add slowly the egg yolks until the dough is firm and hard.
  3. Roll out dough to desired thickness.
  4. Cut with shaped cutters or with a glass.
  5. Paint with beaten egg and place them in a weat baking dish,
  6. Bake with slow heat until golden brown.

Baked apples


Ingredients:

  • 6 apples
  • 100g brown sugar
  • 150g raisins
  • 100g butter
  • 100ml cognac


Directions:

  1. Preheat the oven to 180ºC.
  2. Clean and scoop out the core from top. 
  3. Score the rind of the apple.
  4. Stuff each apple with sugar and butter
  5. Mix the raisins, sugar and cognac.
  6. Place in a shallow baking dish and fill the core well with the mix.
  7. Put a glass of water in the centre dish.
  8. Bake 40 min and serve.

Deviled Chicken


Ingredients:
  • 4 chicken quarters.
  • Bread crumbs

Sauce:

  • 4 tablespoons olive oil.
  • 1 teaspoon mustard.
  • 2 teaspoons curry powder.
  • Salt.
  • 1 teaspoon paprika.


Directions:
  1. Clean the chicken quartes.
  2. Prepare the sauce.
  3. Heat th oil in a pot and add mustard, curry, salt and paprika and mix.
  4. Heat the grill-oven to medium temperature.
  5. Dip in the sauce and put on the baking dish with the skin down.
  6. Cook 5 minutes and turn them, and 5 minutes more.
  7. Add the bread cumbs to the sauce and mix. 
  8. Put the sauce on top the chicken and bake 30 minutes.
  9. Serve hot or cold.
